County health departments
Arizona mobile food permits are issued by county health departments (Maricopa County's program is the best known). There is no Arizona state food-truck license.

Local permits
A county permit does not travel. Each new county means its own permit, its own inspection, and its own commissary rules — Maricopa, Pima, and the rest all run separate programs.
Counties generally expect a commissary agreement; Maricopa requires one for most mobile units.
We print only fees we have verified. This row's fee schedule has not cleared that bar yet, so we do not print a number — the issuing office publishes its schedule, and the Permit Path sheet for this state in the kit walks you to it. A confident number we cannot source is worse than an admitted gap.
Next steps: run your exact move in the free checker, then compare regimes in the full table.
